Zucchini Bread

makes 2 loaves

bake time:1 hour oven temp: 325 degrees

* 1 cup oil
* 2 cups sugar
* 3 eggs
* 2 cups grated raw zucchini (takes about 2 nice sized ones)
* 3 cups flour
* 3 tsp. cinnamon
* 1 tsp. baking soda
* 1/2 tsp. baking powder

1. blend oil and sugar well
2. add eggs - one at a time - and grated zucchini
3. sift together flour, cinnamon, baking soda, baking powder
4. add sifted ingredients to mixture
5. pour evenly into two greased and floured loaf pans
6. bake at 325 degrees for one hour or until toothpick comes out clean
7. turn pans at half-way point
